Salmon Salsa Tacos

For 2 people you need:

  • 1 bag

    of Antica Cantina Street Kitchen Soft Tacos 15 cm

  • 2 tbsp

    of oil

  • 200 g

    salmon fillet, skinless, cut into strips

  • 2 tbsp

    of oil

  • 1 jar

    of Antica Cantina Bio Organic Fruity Taco Sauce Medium

  • 1/2

    each   green, yellow and red pepper, diced

  • 1bag

    of Antica Cantina Bio Organic Taco Seasoning Mix

  • 1

    large red onion, peeled and cut into strips

  • 6

    cherry tomatoes, fried

  • 4

    mini peppers, fried

  • a few

    lettuce leaves of your choice, washed

  • some

    vinaigrette made from vinegar, oil, salt and pepper

  • 1

    lime, quartered

preparation time approx. 20 Min.

Fry the soft tacos in the oil until golden brown and place them in a taco holder. Fry the onion strips in the same pan. Add the diced peppers. Season with some taco seasoning and add the taco sauce. Let the vegetables simmer over low heat for a few minutes. Season the salmon with taco seasoning and fry it in a little oil in a second pan over medium heat (approx. 2-3 minutes per side). Add the vegetable mixture to the tacos and place the salmon strips on top. Drizzle the lettuce leaves with the vinaigrette, divide them between 2 plates and serve the tacos with the fried tomatoes, mini peppers and lime wedges.
