Albondigas con Quesadillas

For 2 persons you need:

  • 200 g

    of minced meat

  • 1 bag

    of Antica Cantina Burrito Seasoning Mix

  • 1 slice

    of toast bread, finely diced

  • 1/2

    red pepper

  • 1/2 jar

    of Fiesta Mexicana Nacho Jalpeños

  • 2

    eggs

  • some

    parsley, finely chopped

  • 1 jar

    of Antica Cantina Taco Sauce Hot

Preparation time approx. 20 Min.

Mix all the ingredients into a dough, form balls and slowly fry them in a little oil until golden brown and cooked through. Heat the taco sauce. Distribute them on plates and place the albondigas on top. Serve with freshly fried quesadillas.

For the quesadillas you need

  • 1 bag
    of Mr. Wraps wheat wraps
  • 1 can
    corn, drained
  • 1
    red pepper, diced
  • 200 g
    Cheddar grated cheese
  • 4 tbsp
    oil

Preparation time approx. 25 Min.

Place wraps in a pan with a little oil. Then distribute ¼ of the grated cheese, the corn kernels and the diced peppers on the bottom half of the wrap and fold the top side over it. Fry everything over medium heat until golden brown on each side, about 3 minutes, until the cheese has melted. Do the same with the other 3 wraps. Cut the finished quesadillas into triangles. Yummy!
