Pork Filet Chipotle

For 2 persons you need:

  • 300 g

    pork fillet, cleaned and cut into medallions

  • 1 bag

    Antica Cantina Fajita Seasoning Mix

  • 2 tbsp

    of oil

  • 1 tbsp

    frozen Italian herbs

  • 1

    zucchini, cut into trips

  • 1

    zucchini

  • 1

    red pepper, diced

  • 1 can

    corn kernels, drained

  • 2 tbsp

    of oil

  • 2 jar

    of Fiesta Mexicana Salsa con Chipotle

  • 2 jar

    of Fiesta Mexicana Salsa Verde

  • 1

    lime, quartered

preparation time approx. 30 min.

Season the fillet with Fajita Seasoning Mix and fry it in oil over medium heat until golden brown and cooked through. Set it aside and keep it warm. Add some of the frozen herbs on top. Fry the vegetables in another pan and season with Fajita Seasoning Mix. Add salsa con chipotle depending on your taste and spiciness. Heat the meat briefly again. Distribute the vegetables on plates, add the meat on top and the lime quarters. Serve additional small bowls with extra salsa verde and salsa con chipotle.
