In a pan, fry the onion in oil. Add the vegetables and season with Taco Seasoning Mix. Add the salsa dip and let everything simmer for a few minutes.
Fry the tortillas in a second pan until golden brown. Make a cut in each tortilla from the edge to the middle, spread the vegetable filling over it and roll up the tortillas from the cut to create bags, as shown in the photo. Top with chipotle mayonnaise and coriander leaves.
