Cancún Salad


For 2 Persons you need:

  • 1

    red onion, diced

  • 2

    spring onions, sliced

  • 1/2

    each green and red pepper, cut into small pieces

  • 100 g

    black beans, cooked. (Or alternatively 1 can of kidney beans)

  • 4

    cherry tomatoes, halved

  • a few

    green lettuce leaves, washed

  • 3 tbsp


  • 1 tbsp

    lemon juice

  • 4 tbsp

    olive oil

  • some

    salt, pepper

  • 1 bag

    Tortilla Barbecue Chips


Mix a salad dressing from vinegar, lemon juice and oil, season with salt and pepper. Divide the lettuce leaves into 2 shallow bowls, carefully mix all the vegetables and the vinaigrette, place them in the middle of the bowls and add a handful of tortilla chips to the top half.
